- Garlic, minced2 cloves
- Bean sprouts2 cups
- Green onions, chopped1/4 cup
- Roasted peanuts, crushed1/4 cup

- Sweet chili sauce1/4 cup
- Soy sauce2 tbsp
- Rice vinegar1 tbsp
- Brown sugar1 tbsp
- Vegetable oil2 tbsp

In a small bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, and brown sugar. Set aside.

Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add garlic and stir-fry until fragrant, about 30 seconds.

Push garlic to one side. Pour in beaten eggs and scramble until just set. Break into pieces.

Add the pre-cooked rice noodles and the prepared sauce to the wok. Toss well to coat. Cook for 1-2 minutes until noodles are heated through.

Add the cooked shredded chicken, bean sprouts, and green onions. Stir-fry for another 1-2 minutes until bean sprouts are tender-crisp.

Season with salt and pepper to taste. Serve immediately, garnished with crushed peanuts and lime wedges.
