- Onions1 large
- Garlic3 cloves
- Mushrooms (e.g., champignons), sliced200g
- Dry white wine100 ml
- Beef broth400 ml
- Heavy cream50 ml
- All-purpose flour2 tbsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste

Season the beef steaks with salt and pepper. Sear in hot oil until browned on both sides. Remove and set aside.

In the same skillet, sauté the chopped onions until softened, about 7 minutes.

Add sliced mushrooms and cook until they release their liquid and start to brown, about 8-10 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Pour in the white wine and scrape the bottom of the pan to deglaze. Let it reduce by half.

Sprinkle the flour over the mushroom mixture and stir well. Cook for 1-2 minutes.

Gradually whisk in the beef broth. Bring to a simmer.

Return the steaks to the skillet. Cover and simmer gently for 40-50 minutes, or until tender. Add water if sauce is too thick.

Stir in the heavy cream and heat through gently (do not boil). Adjust seasoning. Garnish with fresh thyme.
