- Powdered sugar50g

Preheat oven to 160°C (320°F). Crush digestive biscuits and mix with melted butter. Press into the base of a 24cm springform pan.

In a large bowl, beat quark, sugar, eggs, vanilla extract, and lemon zest until smooth.

Pour the filling over the biscuit base. Bake for 60-75 minutes, or until the edges are set and the center is slightly wobbly.

Let the cheesecake cool completely in the oven with the door ajar, then chill in the refrigerator for at least 4 hours.

For the cherry topping: Combine sour cherries, powdered sugar, and cornstarch in a saucepan. Cook over medium heat, stirring, until thickened.
