Preheat oven to 200°C (400°F).

Slice the pork tenderloin into medallions about 2.5 cm (1 inch) thick. Make a pocket in the center of each medallion.

In a small bowl, mix cream cheese, squeezed spinach, garlic powder, salt, and pepper.

Stuff the pocket of each pork medallion with the cream cheese mixture.

Heat olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed medallions for 2-3 minutes per side until golden.

Transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the pork is cooked through (internal temperature 63°C / 145°F).

Let rest for 5 minutes before serving.
