- Veal cutlets500g
- Butter2 tbsp
- Olive oil1 tbsp
- Pre-sliced mushrooms150g
- Garlic powder1/2 tsp
- Heavy cream250ml
- Chicken or vegetable broth50ml
- Lemon juice1 tsp
- Fresh chives1 tbsp, chopped
- Saltto taste
- Black pepperto taste

Cut veal cutlets into medallion-sized pieces. Season with salt and pepper.

Heat butter and olive oil in a skillet over medium-high heat. Sear veal medallions for 1-2 minutes per side until just cooked. Remove and set aside.

Add sliced mushrooms to the skillet and sauté until tender, about 3-4 minutes. Sprinkle with garlic powder.

Pour in the broth and cream. Bring to a simmer and cook for 2-3 minutes until slightly thickened.

Stir in lemon juice. Return veal to the skillet and toss to coat in the sauce. Heat through for 1 minute.
