- Pre-cooked chicken300g, shredded or diced
- Onion1 small
- Chicken broth800ml
- Butter30g
- Parmesan cheese40g
- Olive oil1 tbsp
- Frozen peas100g
- Saltto taste
- Black pepperto taste

Finely chop the onion.

Heat olive oil and butter in a large pan over medium heat. Sauté the onion until softened, about 4 minutes.

Add the Arborio rice and toast for 1 minute, stirring.

Add about half of the chicken broth and bring to a simmer. Cook, stirring occasionally, for about 10 minutes.

Add the remaining broth and the pre-cooked chicken. Continue to cook and stir for another 8-10 minutes, until the rice is tender and the risotto is creamy.

Stir in the frozen peas during the last 2 minutes of cooking.

Remove from heat. Stir in the Parmesan cheese. Season with salt and pepper to taste.
