- Pre-cooked shrimp300g
- Shallot1 large
- Garlic1 clove
- Vegetable broth1 liter
- Heavy cream50ml
- Butter30g
- Parmesan cheese40g
- Lemon zest1 tsp
- Fresh dill1 tbsp, chopped
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste

Finely mince shallot and garlic.

Heat olive oil and butter in a pan over medium heat. Sauté shallot until soft, about 3 minutes.

Add garlic and cook for 30 seconds.

Add Arborio rice and toast for 1 minute.

Add about half of the warm broth and cook, stirring, until absorbed. Add the remaining broth and continue stirring until rice is almost cooked, about 12-15 minutes.

Stir in pre-cooked shrimp, heavy cream, and Parmesan cheese. Cook for 2-3 minutes until shrimp are heated through and risotto is creamy.

Stir in lemon zest and chopped dill. Season with salt and pepper.
