- Pre-cooked chicken (shredded or diced)250g
- Shallots2
- Vegetable broth1 liter
- Butter30g
- Parmesan cheese40g
- Lemon zest1 tsp
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste

Finely chop the shallots.

Heat olive oil and butter in a pan over medium heat. Sauté shallots until softened.

Add Arborio rice and toast for 1 minute.

Add warm vegetable broth, one ladleful at a time, stirring until absorbed. Continue for about 15 minutes.

Stir in the pre-cooked chicken and cook for 2-3 minutes until heated through.

Remove from heat. Stir in Parmesan cheese and lemon zest. Season with salt and pepper.
