Bahan

  • Salted Fish (Ikan Masin)100g
  • Canned Pineapple Chunks200g, drained
  • Coconut Milk400ml
  • Shallots2, finely chopped
  • Garlic2 cloves, minced
  • Ginger1/2 inch, grated
  • Malaysian Curry Paste2 tbsp
  • Curry Leaves1 sprig
  • Vegetable Oil1 tbsp
  • Saltto taste
  • Water50ml

    Fry the salted fish until lightly golden and set aside.

    Sauté shallots, garlic, and ginger in oil until fragrant.

    Add Malaysian curry paste and cook for 2-3 minutes until aromatic.

    Pour in coconut milk and water. Add curry leaves and bring to a simmer.

    Add drained canned pineapple chunks and simmer for 10 minutes.

    Stir in the fried salted fish and simmer for another 5 minutes.

    Adjust salt if needed. Serve hot.
