- Tamarind Paste1 tbsp

Clean and cut the catfish into pieces. Pat dry.

Heat vegetable oil for deep-frying. Fry catfish pieces until golden brown and crispy. Drain.

In a pan, heat 1-2 tablespoons of oil. Add the pre-made sambal tumis or chili paste and sauté briefly.

Stir in tamarind paste, sugar, and salt. Add a splash of water if the paste is too thick. Cook for 2-3 minutes until slightly thickened.
