Cook jasmine rice with coconut milk, pandan leaves, and salt as per standard rice cooker instructions.

Clean and cut squid into bite-sized pieces. Marinate with tamarind paste, sugar, and salt.

Heat oil in a pan. Add pre-made sambal paste and stir-fry for 1-2 minutes until fragrant. Add the marinated squid and cook for 5-7 minutes until tender and sauce is slightly reduced.

Serve the coconut rice with the quick Sambal Sotong. Garnish with sliced hard-boiled eggs, fried anchovies, roasted peanuts, and cucumber slices.
