  • Pandan extract or essence1 tsp
  • Butterfly pea flower extract or food coloring1-2 tsp
  • Salt1 tsp
  • Pre-made sambal1/2 cup
  • Eggs4
  • Crispy fried anchovies (store-bought)1/2 cup
  • Roasted peanuts (store-bought)1/2 cup
  • Cucumber1/2, sliced
  • Vegetable oilfor frying eggs

    Rinse jasmine rice. In a rice cooker or pot, combine rice, coconut milk, water, pandan extract, butterfly pea flower extract, and salt. Stir well.

    Cook the rice as usual. Once cooked, fluff with a fork.
