- Pandan extract or essence1 tsp
- Butterfly pea flower extract or food coloring1-2 tsp
- Salt1 tsp
- Pre-made sambal1/2 cup
- Eggs4
- Crispy fried anchovies (store-bought)1/2 cup
- Roasted peanuts (store-bought)1/2 cup
- Cucumber1/2, sliced
- Vegetable oilfor frying eggs

Rinse jasmine rice. In a rice cooker or pot, combine rice, coconut milk, water, pandan extract, butterfly pea flower extract, and salt. Stir well.

Cook the rice as usual. Once cooked, fluff with a fork.

While rice cooks, fry the eggs sunny-side up. Set aside.

To serve, portion the blue rice onto plates. Add a dollop of pre-made sambal, a fried egg, crispy anchovies, peanuts, and cucumber slices.
