- Tamarind paste3 tbsp
- Red chilies5-7
- Shallots3
- Garlic2 cloves
- Ginger1 inch piece
- Lemongrass1 stalk
- Belacan (shrimp paste)1 tsp
- Sugar1 tbsp
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp
- Water1/4 cup
- Lime juice1 tbsp
- Cilantrofor garnish
- Cucumberfor serving

Slice the beef thinly against the grain.

Prepare the air asam paste: blend red chilies, shallots, garlic, ginger, lemongrass, and belacan until smooth.

In a bowl, combine the blended paste with tamarind paste, sugar, salt, black pepper, vegetable oil, and water. Mix well.

Marinate the beef slices in the air asam mixture for at least 30 minutes (or longer for more flavor).

Preheat grill or grill pan to medium-high heat.

Grill the marinated beef slices for 2-4 minutes per side, or until cooked through and slightly charred.

Squeeze lime juice over the grilled beef just before serving.
