Bahan
- Rice1 cup
- Chicken broth8 cups
- Chicken thigh, boneless and skinless300g
- Shallots, thinly sliced1 cup
- Garlic, minced3 cloves
- Ginger, grated1 inch piece
- Lemongrass, bruised1 stalk
- Star anise2
- Cinnamon stick1
- Cardamom pods3
- Turmeric powder1 tsp
- Saltto taste
- Black pepperto taste
- Fried shallots, for garnish1/4 cup
- Chopped cilantro, for garnish2 tbsp

Rinse the rice thoroughly.

In a large pot, combine rice, chicken broth, chicken thigh, sliced shallots, minced garlic, grated ginger, bruised lemongrass, star anise, cinnamon stick, cardamom pods, and turmeric powder.

Bring to a boil, then reduce heat to low, cover, and simmer for 60-75 minutes, stirring occasionally, until the rice is very soft and has broken down into a porridge consistency. Remove the lemongrass, star anise, cinnamon stick, and cardamom pods.

Shred the cooked chicken thigh and return it to the porridge. Stir well.

Season with salt and black pepper to taste.

Serve hot, garnished with fried shallots and chopped cilantro.
