- Beef broth8 cups
- Beef shank or stewing beef, cut into small pieces300g
- Onions, sliced1 medium
- Garlic, minced4 cloves
- Ginger, grated1 inch piece
- Coriander seeds, toasted and ground1 tsp
- Fennel seeds, toasted and ground1/2 tsp
- Saltto taste
- Black pepperto taste
- Fried shallots, for garnish1/4 cup
- Fresh mint leaves, for garnish2 tbsp

Rinse the rice.

In a pot, brown the beef pieces. Add sliced onions, minced garlic, and grated ginger, and sauté until fragrant.

Add the rinsed rice, beef broth, ground coriander seeds, and ground fennel seeds to the pot. Bring to a boil.

Reduce heat to low, cover, and simmer for 90-100 minutes, stirring occasionally, until the beef is tender and the rice has broken down into a porridge. Add more broth if needed to reach desired consistency.
