- Beef shank or brisket500g
- Water2 liters
- Onion1 large
- Garlic4 cloves
- Ginger2 cm piece
- Star anise2
- Cinnamon stick1
- Cardamom pods3
- Cloves4
- Coriander seeds1 tsp
- Fennel seeds1 tsp
- Saltto taste
- Black pepperto taste
- Celery stalks2
- Carrots2 medium
- Potatoes2 medium
- Fried shallotsfor garnish
- Cilantrofor garnish

Cut beef into large chunks. Blanch beef in boiling water for 5 minutes, then drain and rinse.

In a large pot, combine blanched beef, water, sliced onion, minced garlic, and ginger.

Tie star anise, cinnamon stick, cardamom pods, cloves, coriander seeds, and fennel seeds in a cheesecloth or spice bag. Add to the pot.

Bring to a boil, then reduce heat, cover, and simmer for at least 1.5 hours, or until beef is tender.

Add chopped celery, carrots, and potatoes to the pot. Continue to simmer until vegetables are tender, about 20-30 minutes.

Season the soup with salt and black pepper to taste.

Remove spice bag before serving. Ladle soup into bowls, garnish with fried shallots and fresh cilantro.
