Clean the beef stomach thoroughly. Boil it with beef bones in water for about 2-3 hours until very tender. Skim off any impurities.

While the stomach is boiling, prepare the aromatics. Roughly chop the onion, garlic, and ginger.

In a separate pot, sauté the chopped onion, garlic, and ginger until fragrant. Add star anise, cinnamon stick, cloves, and cardamom pods. Stir for a minute.

Add the boiled beef stomach (sliced thinly) and the beef bone broth to the pot with the aromatics. Add enough water to reach desired soup consistency.

Bring to a boil, then simmer for at least 30 minutes to allow flavors to meld. Season with salt and black pepper to taste.

Serve hot, garnished with fresh cilantro and fried shallots. Offer lime wedges on the side.
