- Shallots6-8, thinly sliced
- Lemongrass2 stalks, thinly sliced white part
- Red chilies4-6, thinly sliced
- Bird's eye chilies2-3, thinly sliced (optional)
- Lime leaves3, finely sliced
- Lime juice2 tbsp
- Terasi (shrimp paste)1/2 tsp, toasted (optional)
- Hot vegetable oil3 tbsp
- Steamed ricefor serving
- Basil leavesfor garnish

Marinate chicken thighs with salt and pepper. Coat with rice flour.

Heat vegetable oil and fry chicken until golden brown and crispy. Drain and set aside.

Prepare Sambal Matah: In a bowl, combine thinly sliced shallots, lemongrass, red chilies, bird's eye chilies, and lime leaves.

Add lime juice, salt, and toasted shrimp paste (if using). Mix well.

Heat 3 tablespoons of vegetable oil until very hot. Pour the hot oil over the sambal mixture and stir quickly to 'cook' the ingredients slightly.

Place fried chicken on a cutting board. Smash them gently.

Toss the smashed chicken with the prepared Sambal Matah.
