- Coconut milk200ml

- Water1.5 liters

Boil chicken thighs until cooked. Shred the chicken and set aside. Reserve the chicken broth.

Prepare the spice paste: pound or blend lemongrass, galangal, turmeric, ginger, shallots, garlic, coriander seeds, and cumin seeds until smooth.

In a pot, heat a little oil and sauté the spice paste until fragrant. Add star anise, cardamom pods, and cinnamon stick, and sauté for another minute.

Pour in the reserved chicken broth and bring to a boil. Add the shredded chicken.

Simmer for at least 30 minutes to allow flavors to meld. Stir in coconut milk and season with salt.

Serve hot, garnished with fried shallots, fresh cilantro, and lime wedges. Accompany with keropok and sambal.
