- All-purpose flour2 cups
- Water1/2 cup
- Salt1 tsp
- Ghee or vegetable oil1/4 cup
- Eggs4
- Canned sardines in oil or tomato sauce, drained and flaked1 can (approx. 150g)
- Onion, finely chopped1/4 cup
- Chili powder or flakes (optional)1/2 tsp
- Vegetable oil for fryingas needed
- Fresh cilantro, chopped (for garnish)2 tbsp

Prepare the dough as in the Classic Roti Telur recipe (steps 1-2).

In a bowl, whisk the eggs. Add the flaked sardines, chopped onion, chili powder (if using), and a pinch of salt. Mix well.

Heat a lightly oiled griddle or flat pan over medium-high heat.

Flatten and stretch one dough ball into a thin circle.

Pour about 1/4 of the sardine-egg mixture onto the flattened dough. Fold the edges inwards to enclose the filling.

Cook on the griddle for 2-3 minutes per side, until golden brown and crispy. Add ghee/oil as needed.

Remove from the griddle, garnish with fresh cilantro, and serve immediately.
