- Salt1 tsp
- Vegetable oil2 tbsp
- Ground beef250g
- Onions1 large, finely chopped
- Mushrooms100g, sliced
- Garlic2 cloves, minced
- Ginger1 tsp, grated
- Curry powder1 tbsp
- Sweet soy sauce (Kecap Manis)1 tbsp
- Egg1, beaten
- Green onions2 stalks, chopped
- Vegetable oil for fryingAs needed
- Curry dipping sauceFor serving

Prepare the dough as in the classic recipe and let it rest.

For the filling: Heat oil, sauté garlic and ginger. Add ground beef and cook until browned. Drain fat.

Add chopped onions and mushrooms, cook until softened and mushrooms are browned.

Stir in curry powder and sweet soy sauce. Cook for 2-3 minutes. Remove from heat.

Mix in the beaten egg and green onions. Season with salt and black pepper. Let cool.

Divide dough, roll into thin circles. Place filling on one half, fold over, and seal edges.

Pan-fry the stuffed roti in oil over medium heat for 4-5 minutes per side until deeply golden and crisp.
