A simplified and quicker version of Serunding Ayam, using pre-cooked chicken and fewer aromatics, suitable for a weeknight preparation while retaining much of the classic flavor.

Bahan
- Cooked shredded chicken300g
- Coconut milk (thick)100ml
- Shallots50g
- Garlic2 cloves
- Chili paste1.5 tbsp
- Sugar1 tbsp
- Saltto taste
- Vegetable oil2 tbsp

Finely chop or process shallots and garlic into a paste.

Heat vegetable oil in a pan over medium heat. Sauté the shallot and garlic paste until fragrant.

Add chili paste and cook for 1-2 minutes until oil separates.

Add the cooked shredded chicken and stir well to coat.

Pour in the thick coconut milk, sugar, and salt. Stir continuously.

Cook over medium-low heat, stirring frequently, until the mixture is mostly dry and the chicken is well-seasoned. It will be slightly moister than the classic version.
