- Popia skin (spring roll wrappers)20 sheets
- Carrots2 medium, julienned
- Cabbage1/4 head, thinly sliced
- Bean sprouts1 cup
- Garlic3 cloves, minced
- Ginger1 inch, minced
- Chicken or Prawn (optional)100g, minced
- Soy sauce2 tbsp
- Oyster sauce1 tbsp
- Sesame oil1 tsp
- Vegetable oil for frying1 cup
- Saltto taste
- Black pepperto taste

Prepare the filling: Heat 2 tbsp of vegetable oil in a wok or large pan. Sauté garlic and ginger until fragrant.

Add minced chicken or prawn (if using) and cook until browned. Stir in julienned carrots, sliced cabbage, and bean sprouts.

Season with soy sauce, oyster sauce, salt, and pepper. Stir-fry until vegetables are tender-crisp. Add sesame oil and mix well. Let the filling cool completely.

Assemble the popia: Lay a popia skin flat. Place about 2-3 tablespoons of filling near one edge. Fold the sides inwards, then roll tightly from the filling edge to enclose.

Seal the edge with a little water or a cornstarch slurry.

Heat vegetable oil for frying in a wok or deep pan over medium-high heat.

Carefully fry the popia in batches until golden brown and crispy on all sides. Drain on paper towels.

Serve hot with chili sauce or your favorite dipping sauce.
