- Jasmine rice2 cups

- Coconut milk1/2 cup
- Lemongrass1 stalk, bruised
- Galangal1 inch piece, sliced
- Turmeric powder1/2 teaspoon
- Red chili1, sliced
- Green chili1, sliced
- Red bell pepper1/4 cup, diced
- Green bell pepper1/4 cup, diced
- Corn kernels1/4 cup
- Peas1/4 cup
- Saltto taste
- Vegetable oil1 tablespoon
- Star anise1

Rinse jasmine rice thoroughly until water runs clear. Drain well.

In a pot, combine rinsed rice, water, coconut milk, bruised lemongrass, sliced galangal, turmeric powder, sliced red and green chilies, diced bell peppers, corn, peas, salt, star anise, and cloves.

Stir to combine all ingredients.

Bring the mixture to a boil over medium-high heat.

Once boiling, reduce heat to low, cover the pot tightly, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.

Let the rice rest, covered, for 5-10 minutes off the heat.

Fluff the rice gently with a fork, mixing in the colorful vegetables and spices.
