Bahan
- Chicken pieces (thighs and drumsticks)1 kg
- Coconut milk200 ml
- Pre-made chili paste (sambal tumis)4 tbsp
- Lemongrass1 stalk
- Tamarind paste1 tbsp
- Palm sugar1 tbsp
- Saltto taste
- Water50 ml
- Cilantro (for garnish)a few sprigs

Bruise the lemongrass stalk.

In a bowl, mix coconut milk, chili paste, tamarind paste, palm sugar, salt, and bruised lemongrass. Stir well.

Add chicken pieces to the marinade. Marinate for at least 20 minutes.

Reserve about half of the marinade for basting. Cook the remaining marinated chicken in a pot with the reserved marinade for 15-20 minutes until almost cooked through.

Grill the chicken pieces over medium-high heat or under a broiler, basting frequently with the reserved marinade, until nicely charred and cooked through. This takes about 8-10 minutes.
