- Dried anchovies (ikan bilis), rinsed and drained30g
- Turmeric powder1.5 tsp
- Chili powder1.5 tbsp (adjust to taste)
- Coriander powder2 tbsp
- Curry leaves1 sprig
- Saltto taste
- Black pepperto taste
- Rice flour3 tbsp
- Cornstarch2 tbsp
- Vegetable oil for deep fryingsufficient
- For Sambal Ikan Bilis:
- Dried anchovies (ikan bilis), soaked and drained50g
- Red chilies5-7
- Shallots2 medium
- Garlic cloves2
- Tamarind paste1 tsp
- Sugar1 tsp
- Saltto taste
- Oil for sautéing2 tbsp

Prepare the marinade: Blend shallots, garlic, ginger, and 30g of rinsed dried anchovies into a paste.

In a bowl, combine chicken with the anchovy paste, turmeric powder, chili powder, coriander powder, curry leaves, salt, and black pepper. Mix well and marinate for at least 30 minutes.

Add rice flour and cornstarch to the marinated chicken. Toss to coat.

Heat oil for deep frying. Fry chicken in batches until golden brown and cooked through. Drain on paper towels.

Prepare Sambal Ikan Bilis: Blend soaked anchovies, red chilies, shallots, and garlic into a coarse paste.

Heat 2 tbsp oil in a pan. Sauté the sambal paste until fragrant and oil separates. Stir in tamarind paste, sugar, and salt. Cook for a few more minutes.
