Nguyên liệu

  • Glutinous rice2 cups
  • Mung beans (split, no skin)1 cup
  • Coconut milk1/2 cup
  • Sugar1/4 cup
  • Salt1/2 teaspoon
  • Wateras needed
  • Fried shallotsfor garnish

Các bước

  1. 1

Rinse the glutinous rice thoroughly and soak it in water for at least 4 hours or overnight.

  2. 2

Rinse the split mung beans and soak them in water for about 1 hour.

  3. 3

Drain the soaked rice and mung beans. In a steamer, layer the rice and mung beans. Steam for about 30-40 minutes, or until the rice is cooked through and tender. You can mix them together halfway through steaming for even distribution.

  4. 4

While the rice is steaming, prepare the coconut milk mixture. In a small saucepan, combine coconut milk, sugar, and salt. Heat gently, stirring until the sugar and salt are dissolved. Do not boil.

  5. 5

Once the rice and beans are cooked, transfer them to a large bowl. Pour the warm coconut milk mixture over the rice and beans. Gently mix to combine, ensuring the liquid is evenly distributed.

  6. 6

Steam the mixture again for another 10-15 minutes to allow the flavors to meld and the rice to absorb the liquid.

  7. 7

Serve the Xôi Đỗ Xanh warm, garnished generously with fried shallots.
