- Vietnamese curry powder2 tbsp
- Fish sauce2 tbsp
- Sugar1 tsp
- Beef broth750ml
- Rice noodles300g
- Saltto taste

Cut beef into bite-sized pieces. Season with salt and pepper.

Chop onion and mince garlic.

In a pot, sauté onion and garlic until softened. Stir in curry powder and lemongrass paste, cook for 1 minute until fragrant.

Add beef and sear until browned.

Pour in beef broth, fish sauce, and sugar. Bring to a simmer, cover, and cook for 45-60 minutes, or until beef is tender.

Add peeled and chopped carrots during the last 20 minutes of cooking.
