- Canned or pre-cooked mung beans, drained2 cups
- Water3 cups
- Sugar1/3 cup
- Coconut milk1/4 cup
- Vanilla extract (optional, for aroma)1/2 teaspoon
- Saltpinch

In a saucepan, combine the drained mung beans, water, sugar, and salt. Bring to a simmer over medium heat.

Cook for about 10-15 minutes, stirring occasionally, until the beans are heated through and the sugar is dissolved. Mash some of the beans against the side of the pot to thicken the soup slightly.

Stir in the coconut milk and vanilla extract (if using). Heat for another 2-3 minutes, but do not boil.

Serve warm or chilled. Garnish with toasted coconut flakes or a drizzle of coconut milk.
