Clean and cut pork trotters into manageable pieces.

Finely chop lemongrass (white part only), shallots, and garlic.

In a pot, combine pork trotters, chopped lemongrass, shallots, garlic, fish sauce, sugar, turmeric powder, salt, and pepper.

Add enough water to cover the pork. Bring to a boil.

Reduce heat, cover, and simmer for about 1.5 hours, or until pork is tender.

Check tenderness and adjust seasoning. The broth should be flavorful.
