- Carrots250 g
- Lemongrass paste2 tbsp
- Minced garlic1 tbsp
- Minced ginger1 tbsp
- Annatto oil1 tbsp
- Star anise2
- Cinnamon stick0.5
- Vietnamese curry powder1.5 tbsp
- Tomato paste1 tbsp
- Fish sauce2 tbsp
- Sugar0.5 tbsp
- Saltto taste
- Black pepperto taste
- Water or beef brothas needed
- Green onionsfor garnish

Cut beef into 1.5-inch cubes. Peel and dice carrots.

Heat annatto oil in a pot over medium-high heat. Add beef and sear until browned on all sides.

Add lemongrass paste, minced garlic, and minced ginger. Sauté for 1 minute until fragrant.

Stir in curry powder and tomato paste. Cook for 30 seconds.

Add star anise, cinnamon stick, fish sauce, sugar, salt, and pepper. Pour in enough water or broth to cover the beef.

Bring to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until beef is tender.

Add carrots during the last 20 minutes of cooking.

Adjust seasoning. Remove star anise and cinnamon stick.

Serve hot, garnished with chopped green onions.
