- Ripe durian flesh300g
- Coconut milk400ml
- Tapioca pearls (small)50g
- Water200ml
- Sugar (rock sugar or granulated)50g
- Pandan leaves2

Prepare the tapioca pearls: Rinse the pearls and soak them in water for about 30 minutes. Drain.

Cook the tapioca pearls: Boil the soaked tapioca pearls in plenty of water until they turn translucent (about 15-20 minutes). Drain and rinse with cold water. Set aside.

Prepare the durian: Remove any seeds from the durian flesh and mash it slightly with a fork, leaving some chunks for texture.

Make the coconut milk base: In a saucepan, combine coconut milk, water, sugar, pandan leaves (tied in a knot), and a pinch of salt. Heat gently over medium-low heat, stirring until the sugar dissolves. Do not boil.

Infuse the pandan: Let the pandan leaves steep in the warm coconut milk mixture for about 10-15 minutes to infuse their aroma. Remove the pandan leaves.

Combine ingredients: Add the mashed durian and cooked tapioca pearls to the coconut milk mixture. Stir gently.

Heat through: Gently heat the mixture for another 5 minutes, ensuring it doesn't boil. The durian should be warmed through and the flavors melded.

Serve: Ladle the Chè Sầu Riêng into individual bowls. Serve warm or chilled.
