
Traditional Rhodope Kolaci (Rodopski Kolaci)

A classic Rhodope region pastry, these kolaci are savory, often filled with sirene cheese and sometimes eggs, baked until golden brown. They are typically made with a yeasted dough and have a rustic, comforting appeal.

- Warm water250ml
- Active dry yeast7g
- Sugar1 tsp
- Salt1 tsp
- Sirene cheese (Bulgarian feta)300g

Activate yeast in warm water with sugar. Let it sit for 10 minutes until foamy.

In a large bowl, combine flour and salt. Make a well in the center.

Pour the activated yeast mixture into the well and gradually mix with the flour to form a soft dough.

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.

Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour, or until doubled in size.

While the dough rises, crumble the sirene cheese and mix it with the beaten eggs.

Punch down the risen dough and divide it into 8 equal portions.

Flatten each portion into a circle, place a spoonful of the cheese-egg mixture in the center, and fold the dough to enclose the filling, forming a rustic, somewhat flat patty.

Place the kolaci on a greased baking sheet, leaving some space between them.

Bake in a preheated oven at 200°C (400°F) for 20-25 minutes, or until golden brown and cooked through.
