
Classic Chicken Biryani

A fragrant and flavorful layered rice dish with tender chicken, aromatic spices, and herbs. This classic recipe involves marinating chicken, par-cooking rice, and then slow-cooking everything together to meld the flavors.

- Yogurt, plain200 g

- Mint leaves, fresh1 bunch
- Cilantro, fresh1 bunch
- Ghee or vegetable oil100 ml
- Whole spices (cardamom pods, cloves, cinnamon stick, bay leaves)1 tbsp
- Ground spices (turmeric, red chili powder, coriander powder, cumin powder, garam masala)2 tbsp
- Saffron threadsa pinch
- Milk, warm50 ml
- Saltto taste
- Black pepperto taste

Marinate chicken: Cut chicken into pieces. In a bowl, combine chicken with yogurt, ginger-garlic paste, green chilies, ground spices, and salt. Marinate for at least 1 hour, or preferably overnight.

Prepare rice: Wash basmati rice thoroughly and soak for 30 minutes. Boil water with salt and whole spices. Add rice and cook until 70% done. Drain and set aside.

Fry onions: Thinly slice onions and fry in ghee/oil until golden brown and crisp. Reserve half for garnish.

Make the chicken masala: In a heavy-bottomed pot, heat ghee/oil. Add whole spices and sauté. Add marinated chicken and cook until browned. Add chopped tomatoes and cook until oil separates.

Layer the biryani: Spread half of the par-cooked rice over the chicken masala. Top with fried onions, chopped mint, and cilantro. Layer the remaining rice on top. Drizzle with saffron-infused milk.

Dum cooking: Cover the pot tightly with a lid (seal with dough if needed). Cook on low heat for 25-30 minutes, allowing the biryani to steam and cook through.

Rest and serve: Let the biryani rest for 10 minutes before gently mixing and serving.
