For the choux pastry: In a saucepan, melt butter with water and salt over medium heat. Bring to a boil.

Remove from heat and stir in flour until a smooth ball forms. Return to low heat and cook, stirring constantly, for 1-2 minutes to dry out the dough.

Transfer dough to a mixing bowl. Let cool for 5 minutes. Beat in eggs one at a time until fully incorporated and the dough is smooth and glossy.

Pipe or spoon mounds of dough onto baking sheets lined with parchment paper. Bake at 400°F (200°C) for 20 minutes, then reduce heat to 350°F (175°C) and bake for another 20-25 minutes until golden brown and puffed.

Let cool completely on a wire rack. Once cool, slice the pastry shells in half horizontally.

For the custard: In a saucepan, whisk together milk, sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly, until thickened.

Remove from heat and stir in vanilla extract. Let the custard cool, covered with plastic wrap directly on the surface to prevent a skin from forming.

Fill the cooled pastry shells with the custard. Dust with powdered sugar before serving.
