
Quick Porcini Mushroom Soup

- Dried porcini mushrooms30g
- Onion1/2 medium
- Garlic1 clove
- Vegetable broth1 liter
- Butter or olive oil1 tablespoon
- Fresh parsley2 tablespoons, chopped
- Saltto taste
- Black pepperto taste

Rinse the dried porcini mushrooms. Soak them in hot water for 20 minutes. Strain, reserving the soaking liquid, and chop the mushrooms.

Strain the reserved mushroom liquid through a fine sieve or cheesecloth to remove grit.

Finely chop the onion and mince the garlic.

In a pot, heat butter or olive oil over medium heat. Sauté the onion until translucent, about 3-4 minutes. Add garlic and cook for 1 minute more.

Add the chopped rehydrated mushrooms and cook for 2 minutes.

Pour in the vegetable broth and the strained mushroom soaking liquid. Bring to a boil, then reduce heat and simmer for 15 minutes.

Season with salt and black pepper to taste.

Stir in the chopped fresh parsley just before serving. Serve hot.
