- Yellow onions4 large
- Sirene cheese (Bulgarian white brine cheese)12 oz
- Eggs3 large
- Butter, melted1/2 cup
- Vegetable oil1/4 cup
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Water1/4 cup

Thinly slice the onions and sauté them in oil until deeply caramelized and soft. Let cool.

In a large bowl, whisk together the eggs, crumbled sirene cheese, cooled caramelized onions, salt, and pepper.

Preheat oven to 375°F (190°C). Brush a 9x13 inch baking dish with melted butter.

Lay one sheet of phyllo dough in the baking dish, brushing it generously with melted butter. Repeat with 7 more sheets, buttering each layer.

Spread the onion and cheese filling evenly over the phyllo base.

Layer the remaining phyllo sheets on top of the filling, buttering each sheet as you go. Tuck the edges in neatly.

Score the top layers of phyllo into serving portions. Brush the top generously with the remaining melted butter.

Pour the 1/4 cup of water evenly over the top of the luknik. This helps create steam and a crispier crust.
