
Quick Pork with Quince Skillet

A simplified, quicker version of the traditional dish, made in a skillet. Pork tenderloin is quickly seared and then braised with pre-cooked quince slices and a savory sauce.

- Pork tenderloin600g
- Quince paste or pre-cooked quince slices200g
- Onion1 large
- Garlic2 cloves
- Vegetable oil30 ml
- Chicken or vegetable broth250 ml
- White wine (optional)100 ml
- Saltto taste
- Black pepperto taste
- Fresh thyme or parsleyfor garnish

Cut the pork tenderloin into medallions or strips. Season with salt and pepper.

Slice the onion thinly and mince the garlic.

Heat vegetable oil in a large skillet over medium-high heat. Sear the pork pieces until browned on both sides. Remove from skillet.

Add the sliced onion to the skillet and sauté until softened. Add minced garlic and cook for another minute.

If using quince paste, dissolve it in the broth. If using pre-cooked slices, add them to the skillet.

Pour in the white wine (if using) and scrape up any browned bits from the bottom of the skillet. Let it reduce slightly.

Add the broth (with dissolved quince paste, if used) to the skillet. Bring to a simmer.

Return the pork to the skillet. Reduce heat, cover, and simmer for 15-20 minutes, or until the pork is cooked through and the sauce has thickened slightly.

Adjust seasoning with salt and pepper. Garnish with fresh herbs before serving.
