Pat the pork chops dry and season with salt and pepper.

Heat olive oil in a skillet over medium-high heat. Sear pork chops for 3-5 minutes per side, until golden brown and cooked through. Remove and set aside to rest.

Slice the apples and finely chop the shallots.

Reduce heat to medium. Add butter to the same skillet. Add shallots and sauté until softened, about 2 minutes.
