Cut pork loin into 2 cm thick medallions. Clean and slice wild mushrooms. Finely chop shallots.

Melt butter in a skillet over medium-high heat. Sear pork medallions for 3-4 minutes per side until golden brown. Remove pork and set aside.

Add shallots to the skillet and sauté until softened, about 3-4 minutes.

Add wild mushrooms and cook until tender and lightly browned, about 7-10 minutes.

If using, deglaze the pan with white wine, scraping up any browned bits. Let it reduce by half.

Pour in heavy cream and water. Bring to a gentle simmer. Season with salt and pepper.

Return pork medallions to the sauce. Simmer gently for 5-10 minutes, or until pork is cooked through and sauce has thickened slightly.
