- Dark beer500 ml
- Coarse-grain mustard4 tbsp
- Honey2 tbsp
- Onion1 pc
- Garlic3 cloves
- Saltto taste

Preheat oven to 170°C (340°F).

Score the skin of the pork knuckles.

Season the knuckles with salt and pepper. Place in a roasting pan with chopped onion and garlic.

Pour the dark beer into the bottom of the pan.

Cover with foil and roast for 2 hours.

While roasting, mix mustard and honey to create a glaze.

Remove foil. Brush the pork knuckles generously with the mustard-honey glaze.

Increase oven temperature to 200°C (400°F) and roast for another 30-40 minutes, basting occasionally with pan juices and more glaze, until crispy and caramelized.
