Butterfly the pork loin to create a large, flat piece. Season with salt and pepper.

Finely chop parsley, sage, and garlic. Combine in a bowl with breadcrumbs, lemon zest, 1 tbsp olive oil, salt, and pepper.

Spread the breadcrumb mixture evenly over the pork loin. Roll up tightly and secure with kitchen twine.

Heat the remaining olive oil in an oven-safe skillet over medium-high heat. Sear the pork roll on all sides until golden brown.

Transfer the skillet to a preheated oven at 190°C (375°F).

Roast for 45-60 minutes, or until the internal temperature reaches 70°C (160°F).
