
Banitsa with Sirene and Spinach

- Filo dough1 package (approx. 500g)
- Sirene cheese350g
- Eggs3 large
- Fresh spinach200g
- Plain yogurt100g
- Butter, melted100g
- Vegetable oil50ml
- Salt1/4 teaspoon
- Black pepper1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a round baking dish.

Wash and finely chop the fresh spinach. Sauté briefly in a pan until wilted, then squeeze out excess moisture.

Crumble the sirene cheese into a bowl. Add the eggs, yogurt, wilted spinach, salt, and pepper. Mix well.

Prepare the filo dough as in the classic recipe: brush each sheet with a mixture of melted butter and oil, and spread the filling evenly between layers.

Layer the filo and filling in the prepared baking dish.

Brush the top layer generously with the butter and oil mixture.

Bake for 35-45 minutes, or until the banitsa is golden brown and cooked through.
