- Potatoes500g
- Bacon, diced100g
- Onion1 large
- Garlic3 cloves
- Tomato paste2 tbsp
- Beef broth500ml
- Smoked paprika1 tbsp
- Dried savory1 tsp
- Bay leaf1
- Vegetable oil (optional, if bacon is lean)1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh dillfor garnish

Cut beef into 2-3 cm cubes. Season with salt and pepper.

Peel and chop potatoes. Chop onion and mince garlic.

In a large pot or Dutch oven, cook diced bacon over medium heat until crispy. Remove bacon bits and set aside, leaving rendered fat in the pot.

If needed, add a little vegetable oil. Brown the beef cubes in the bacon fat. Remove beef and set aside.

Add chopped onion to the pot and sauté until softened, about 5 minutes.

Stir in minced garlic and tomato paste, cook for 1 minute.

Return beef to the pot. Add beef broth, smoked paprika, dried savory, and bay leaf. Bring to a simmer.

Cover and simmer for 1.5 hours, or until beef is tender.

Add the chopped potatoes to the pot. Ensure they are submerged. Add more broth if necessary.

Continue to simmer, covered, for another 30-45 minutes, or until potatoes are tender.

Remove bay leaf. Stir in most of the crispy bacon bits (reserve some for garnish). Season with salt and pepper.
