A classic Bulgarian banitsa, a baked layered pastry made with eggs, sirene cheese, and phyllo dough. This traditional version highlights the rich, savory flavors and flaky texture.

- vegetable oil50ml
- salt1/2 teaspoon
- black pepper1/4 teaspoon

Preheat oven to 180°C (350°F). Grease a baking dish.

Crumble the sirene cheese into a bowl. Whisk in the eggs, yogurt, salt, and pepper until well combined.

Lay one sheet of phyllo dough in the baking dish, brushing it lightly with a mixture of melted butter and oil. Repeat with 5 more sheets, layering and brushing each one.

Spread the cheese mixture evenly over the layered phyllo dough.

Layer the remaining 6 sheets of phyllo dough on top of the cheese filling, brushing each sheet with the butter and oil mixture.

Tuck the edges of the phyllo dough under to create a neat border.

Score the top layer of the banitsa into desired portions (squares or diamonds).

Bake for 30-40 minutes, or until the banitsa is golden brown and puffed up.

Let it cool slightly before serving. Serve warm, optionally with a dollop of yogurt.
