Slice the lukanitsa into 1-1.5 cm thick rounds.

Finely chop the onion and garlic. Dice the tomatoes and red bell peppers.

Heat olive oil in a pan over medium heat. Add the lukanitsa slices and fry until golden brown on both sides. Remove from pan and set aside.

In the same pan, add the chopped onion and sauté until softened, about 5 minutes.

Add the diced bell peppers and cook for another 5-7 minutes until slightly tender.

Add the diced tomatoes and minced garlic. Season with salt and pepper. Cook for 10-15 minutes, stirring occasionally, until the sauce thickens.

Return the fried lukanitsa slices to the pan with the sauce. Simmer for 5 minutes to allow flavors to meld.

In a separate small pan, fry the eggs sunny-side up or to your preference.

Serve the lukanitsa and sauce in individual rustic dishes or a shared clay pot. Top each serving with a fried egg and garnish with fresh chopped parsley.
