Preheat oven to 180°C (350°F). Grease and flour a 24cm (9-inch) round cake pan.

Grate the carrots finely. Chop the walnuts coarsely.

In a large bowl, whisk together eggs and sugar until pale and fluffy.

Gradually whisk in the vegetable oil.

In a separate bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.

Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Fold in the grated carrots and chopped walnuts.

Pour the batter into the prepared cake pan and bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

While the cake cools, prepare the frosting: Beat softened butter and cream cheese until smooth. Gradually add powdered sugar and beat until light and fluffy.

Once the cake is completely cool, spread the frosting evenly over the top. Garnish with extra chopped walnuts.
