- Kalamata olives100g, pitted
- Garlic2 cloves, sliced
- Fresh oregano1 tbsp, chopped
- Olive oil3 tbsp
- White wine (optional)50ml
- Saltto taste

Preheat oven to 190°C (375°F).

Clean and prepare the mackerel as in the classic recipe.

In a baking dish, combine halved cherry tomatoes, pitted olives, sliced garlic, and chopped oregano.

Drizzle the tomato and olive mixture with olive oil and white wine (if using). Season with salt and pepper.

Place the mackerel on top of the vegetable mixture.

Season the mackerel and drizzle with a little more olive oil.

Bake for 25-30 minutes, or until the fish is cooked through and the tomatoes are softened.

Serve the baked mackerel directly from the dish, spooning the tomato and olive mixture over the fish.
