- Mussels1 kg
- Arborio rice200 g
- Onion1 large
- Garlic3 cloves
- Tomatoes400 g
- Smoked paprika2 tsp
- Dry white wine100 ml
- Fish or vegetable broth500 ml
- Olive oil3 tbsp
- Fresh parsley1/2 bunch
- Saltto taste
- Black pepperto taste

Clean the mussels.

Finely chop the onion and garlic.

Dice the tomatoes.

Heat olive oil in a large pot over medium heat. Sauté the onion until softened, about 5-7 minutes.

Add the garlic and cook for 1 minute.

Stir in the rice and toast for 1-2 minutes.

Add the smoked paprika and stir for 30 seconds until fragrant.

Pour in the white wine and let it reduce.

Add the diced tomatoes and broth. Season with salt and pepper.

Bring to a simmer, then add the mussels. Cover and cook for 10-15 minutes until opened. Discard unopened mussels.

Stir in most of the chopped parsley.

Serve hot, garnished with remaining parsley and an extra sprinkle of smoked paprika.
