- Extra virgin olive oil80 ml
- Red wine vinegar30 ml
- Garlic2 cloves
- Cherry tomatoes200 g
- Cucumber1
- Red onion1/2
- Kalamata olives100 g
- Fresh mint1/4 cup
- Saltto taste
- Black pepperto taste

Boil the octopus until tender as per the classic recipe (Step 1 & 2). Let cool and cut into bite-sized pieces.

Grill the octopus pieces for 3-5 minutes per side until charred. Set aside.

Prepare the vinaigrette: whisk together 60 ml olive oil, red wine vinegar, minced garlic, salt, and pepper.

Chop the cherry tomatoes, slice the cucumber, thinly slice the red onion, and pit the olives.

In a large bowl, combine the grilled octopus, tomatoes, cucumber, red onion, and olives.

Pour the vinaigrette over the salad and toss gently to combine. Stir in fresh mint.

Serve immediately, drizzled with remaining olive oil.
